A Day on the Farm!

While we were at my (emily's) parents, the field around their house was being harvested. Corbin was fascinated with the tractors and trucks that were harvesting the beets! He rode the horsey! A lot!
And watched the farmers!
He also picked some "flowers"!

Friends!

I decided to be daring on Thursday and headed all by my lonesome with the boys over to Fergus. Our first stop was for breakfast (late breakfast) with some of my co-workers when I Joel and I lived there! We had a great time catching up! It was so fun to see them again, they couldn't believe I was willing to meet them at 9:30 (a little late as usual) A.M. I was told by that the reason my hair was dry was because of the drive! Oh....the memories of getting up at 8:45 so I could be to work by 9...or 9:15! From there, we headed over to Danny and Mandy's! It was so much fun! There little guy, Zeke, is 2 days older than Elias!!!
They are best buds already! (Eli told me when we got in the car.)
And we let Corbin take a few pictures of us. This is the best out of all of them, honestly, I'm impressed! We all 4 made it in the picture!!!

From there, we went to Target to get something for Elias to wear in his pictures! I took the boys to get their pictures taken after that. I wish I could say it was a great experience, but it was chaos! The photographer was really nice and I felt bad for him (being I was a basketcase). I'm sure the pictures turned out amazing...can't wait to see them. But, Corbin needed a nap, so he ran circles around me. Elias was starving, so he barely smiled and ended up fussing most of the time!
After the pictures, I was mentally exhausted!!! I thought about calling a few people and trying to get together, but I didn't have any energy left! So, we went to F&F and visited a few people there and then headed back to Gpa & Gma's!
(I'm sorry to those of you I didn't get ahold of...if my boys were angels we would have visited all day!)

Foodstock in Fargo!

It was that time of year again...time for the food show!!!

We meet up with Joel's parents and this year Ruth and Heather, also, and we enjoy a very filling afternoon!
The theme was "Foodstock".
And we ate to our fill!
It was groovy! (Ok, not really groovy, but it was fun!)

Fun Morning!

Today, Corbin, Elias and I (emily) had a fun morning! Corbin played with sidewalk chalk. He has really started to get excited about colors! Everything is "lellow" but it's a start. He will say blue if you ask him to...he says it so clear!
There aren't many flowers left in our flowerbeds, but I snapped a few pictures of some open ones.
We also went apple picking with our friends! We picked 3 laundry baskets full between the 2 families! Lots of nummy applesauce for Elias (baby food) and crisps and pies for the rest of us!

On the way back from picking, I felt like taking the long way home being Elias was asleep and Corbin was enjoying looking and "a cows...mooo"!

I will be missing all these blossoms during the long, cold months to come!

Elias got this adorable "choo-choo" (in the words of Corbin) outfit from my aunt & uncle!

Ordination

Sunday was a special day for our church. We ordained two elders!
Joel and MaryBeth came up to be part of the big day! We had a great time with them as our guests! It's always fun to have familiar faces from FF come and visit!
God is so good! And have been enjoying watching Him work!

Cooking Class

Last week, there was a healthy cooking class offered to the community. About 10 adults showed up and it was a blast! We got to watch the "cook" make a stir-fry meal and also learned about the food pyramid. So, after eating the very good stir-fry, I decided to make it at home.
Corbin chopped right along with me. He mixed and he chopped and he cooked his own stir-fry!
It was still a little raw when he was done though...so we ate the one I made instead!
So yummy!!!
I don't know how many like really easy 20 minute meals...but this is one of them! So, here's the recipe for anyone interested! Enjoy!
1 chicken breast, boned, skinned and cut into thin strips (or small chunks)
2 Tbsp. vegetable oil
1 c. thinly sliced carrots
1 c. thinly sliced celery
2 c. shredded cabbage
1 Tbsp. soy sauce
2 c. chicken broth
2 Tbsp. cornstarch
Heat oil in a large frying pan. Stir-fry chicken quickly until lightly brown. Add vegetables, broth and soy sauce. Bring to boil. Cover and cook for 5 minutes over low heat or until vegetables are crisp-tender. Blend cornstarch and 1/4 cup cold water. Add to chicken mixture. Cook until the mixture thickens and bubbles. Stir the mixture constantly while it is cooking Serve over hot cooked rice.
Serves four. Per serving: 180 calories, 11 g carbohydrates, 8 g fat, 2 g fiber and 890 mg sodium.

The Potty Throne!

Who knows if Corbin is really ready to start potty training...but we thought we would bring it up and show him his future "throne"! It has a laser that detects motion. When he "goes" a royal song sings to let him know! It even came with a book about going potty!
He has used it twice...and boy has it been exciting!!!

There was a bike and Gma & Gpa's that was just Corbin's size, but it was a princess bike! Corbin seems to prefer the color pink and anything girly...yes, you read that right.

We had such a great time this weekend with family! We got lots of visiting it, not so much shopping (but enough) and made lots of memories!
